Seems like the fastest turn around would be to get a 10mm machined down to 7.5mm from the outside where it meets the wheels. If I can't find a 7.5mm with extended hub, I'll get my 10mm machined down

The hubcentric part would be my concern if machined down. But lmk how that goes.

Worst case I'm going to throw a 10mm on and rub a bit.

If you cut down ~2.5mm from the outside face where it meets the wheel as well as the hubcentric hub lip same amount then you should be good. Much better than running slip ons.
