For 7.5" wide wheels, on all four wheels, stock fit is a 34mm ET. You can run down to about 29 or 30 ET and they will not stick out too far. Given the clearance issues against the strut on the inside fronts, I would not go much higher than 35 or 36ET.

For 8" wide wheels stock is 30ET, I am running 29ET on my winters and they stick out an insignificant 1mm more.

The wide range 30 to 50 ET quoted above is for fronts AND rears and with bigger wheels, stock 18" rear is 9 inches wide 40ET, so you can see there is room for fitment options in the back. FYI, although more offsets will fit in the back with narrower wheels, they will not look right. Stick as close to stock as possible.
