Manufacturer-published Nürburgring lap times nearly always include the entire Nordschleife - not just Bridge to Gantry.

However, the 8:19 time in this video also includes the Grand Prix circuit (which itself has several configurations) + the Nordschleife.

So the configuration the E46 M3 GTR used is 2.20 miles (3.55 km) longer than the configuration manufacturers use when they publish 'Ring times.

In the video, he enters the Nordschleife at 3:17. This is just barely past the start/finish line for the Nordschleife. He exits the Nordschleife and re-enters the Grand Prix circuit at 10:07 in the video. There's a right turn at 10:07 blocked by an Armco barrier; that's where you'd turn to stay on the Nordschleife and cross the start/finish line a second or two later. So a good estimate of his time on the course the manufacturers use when they publish their 'Ring times is 10:07 - 3:17 + 3 seconds = 6:53.

Here is how the two different layouts compare. These maps are from iRacing:

Industriefahrten: 12.94 miles (20.82 km)

Gesamtstrecke VLN: 15.14 miles (24.37 km)
