You do realize that Eco pro mode really dulls the throttle response and upshifts early, right?

That IS one of the points of Eco pro: smooth out your throttle inputs in order to save gas. When you do floor it in Eco pro mode it does eventually give you the power, but rather reluctantly and therefore after a delay (that may feel quite long to you).

The best way to be friends with Eco Pro is to really "chill out" (my wife calls it "zen mode") and drive niiiiice and smooooth with sloooow acceleration. If you want to make some rapid progress, quickly accelerate to pass people or dice through traffic just turn it off because otherwise all it will do is just piss you off with very very dull throttle response, and slowness to downshift.
