You can always add grain in post processing if that's your thing, usually with better results than the results of a noisy hi-iso image.
The importance of white balance is the reason I recommend having that setting right on the camera, not buried in a menu. If your white balance is too far off, you can blow out a color channel, and then you're stuck in post. Sure, you can adjust almost anything in post, but I still think its better to get it right in the camera.
